In which I am participating in the Great Cookie Recipe Exchange


Do you have whiplash due to jumping from Uganda's anti-homosexuality bill to cookie recipes for Christmas?

Welcome to my world, friends. I do this all day long. Politics to diapers (surprisingly, many similarities there....both are rather full of...well, never mind), social justice to what's for supper?, poetry to folding laundry.


Jessica over at The Mom Creative is hosting a Christmas Cookie Recipe Exchange. There are a gazillion (more or less) recipes at her site now so head over and check it out if you need some inspiration for Christmas baking.


Here is my (not-so) healthy and (not-so) famous cookie recipe for Christmas. And by "my recipe" I really mean that it is my mother's recipe but I do the baking of it.


Lemon Sugar Cookies with Icing
(Word to the wise: Don't bring these around the Slaters. They will EAT THEM ALL.)


Cookies
1/2 cup butter
1/2 cup white sugar
1 egg
1/2 can sweetened condensed milk (I use Eagle Brand)
2 tbsp lemon juice
1 tsp vanilla
2 and 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp salt


1. Cream butter and sugar together in a large bowl using an electric mixer.
2. Beat in egg, milk, lemon juice and vanilla.
3. Sift dry ingredients together (I never sift and they still turn out. Just sayin'.), add to liquid and beat until smooth.
4. Divide dough into three equal parts, wrap in wax paper and refrigerate overnight.
5. Next day, roll out each portion on a floured surface to about 1/4" thickness. Cut out with Christmas cookie cutters and place on greased cookie sheets.
6. Bake at 350 for about 8-10 minutes (until edges are golden brown).
7. Then....


Icing
1/3 cup solid Crisco (shortening)
1/3 cup real butter (yeah, baby)
1/2 tsp vanilla
3 cups icing sugar
2 tbsp milk


Mix together with an electric mixer. Separate equally between 3-4 bowls and then add food colouring. I like to do a red, green, yellow and blue.


Then slather the cookies with the icing and add sprinkles.


Prepare to erect a guard near the cookies because every time you blink, another 16 will be gone.
